Muffin Tin Monday - Cinco De Mayo

Muffin Tin Monday at Her Cup Overfloweth

This week at Muffin Tin Monday the theme is Cinco De Mayo/Mexican Heritage. I haven't been to the grocery store yet, so my theme was a little weak.

Top row: a teeny tiny piece of Slow Cooker Pork Tacos, Quesedillas
Bottom row: Green Beans, Veggie Straws, Sour Cream

This was the last of the sour cream and there was almost a meltdown when it was all gone. She could probably eat an entire muffin cup full of it with her quesedilla. Poor girl was sick most of the weekend and is still getting over it, so meltdowns were sort of inevitable.

Little man joined in the fun and also had quesedilla and veggie straws. He also ate an entire cup of baby food and a piece of string cheese and a graham cracker, but he did enjoy his quesedilla :)

looks good to me. luckily my toddler is easily distracted from melt downs (80% of the time)

and yes wondermom you could drink margaritas through a veggie straw and that makes it healthy right? shoot i've got to get to cosco. i need me some veggie straws.

Any meal that involves veggies is perfect! We are struggling so hard with veggies right now. Great tin!
