Tasty Tuesday - Shepherd's Pie

I guess you could say that this is an original recipe. I've taken a recipe that was okay and modified just about every part of it to be something that's tasty every time. The mixture of red and sweet potatoes give it a unique flavor, as does the BBQ sauce in place of ketchup. You can use whatever vegetables you and your family like. I've used fresh and frozen and either one works just fine. If you use fresh, I would recommend steaming them ahead of time. Sorry, forgot to take a picture when I made it last week :/

{Ingredients}
  • 2-3 red potatoes
  • 1-2 sweet potatoes
  • 3 large cloves garlic, peeled
  • 3/4 cup sour cream
  • 1 cup sharp cheddar cheese
  • 1 pound ground turkey (or beef)
  • Season salt
  • 2 tbsp flour
  • 4 cups vegetables, thawed if frozen - I usually use mixed veggies with added green beans
  • 3/4 cup chicken or beef broth
  • 1/3 cup BBQ Sauce

{Directions}
  • Peel potatoes and cut into chunks. Place in large pot with garlic. Cover with water and bring to a boil. Simmer on med-low heat for 20 minutes or until potatoes are very tender. Drain; return to pot. Add sour cream and 1/3 cup cheese. Mash to desired consistency
  • Meanwhile, preheat oven to 375 degrees. Brown meat in large skillet with season salt to taste. Drain if necessary. Stir in flour; cook 1 minute. Add vegetables, broth, and BBQ sauce; continue cooking 5 minutes
  • Spoon meat mixture into 2-qt casserole dish or 8-inch square pan. Cover with mashed potatoes. Top with remaining cheese. Bake for 18-20 minutes or until heated through and cheese is melted.
