{Ingredients}
- 2-3 red potatoes
- 1-2 sweet potatoes
- 3 large cloves garlic, peeled
- 3/4 cup sour cream
- 1 cup sharp cheddar cheese
- 1 pound ground turkey (or beef)
- Season salt
- 2 tbsp flour
- 4 cups vegetables, thawed if frozen - I usually use mixed veggies with added green beans
- 3/4 cup chicken or beef broth
- 1/3 cup BBQ Sauce
{Directions}
- Peel potatoes and cut into chunks. Place in large pot with garlic. Cover with water and bring to a boil. Simmer on med-low heat for 20 minutes or until potatoes are very tender. Drain; return to pot. Add sour cream and 1/3 cup cheese. Mash to desired consistency
- Meanwhile, preheat oven to 375 degrees. Brown meat in large skillet with season salt to taste. Drain if necessary. Stir in flour; cook 1 minute. Add vegetables, broth, and BBQ sauce; continue cooking 5 minutes
- Spoon meat mixture into 2-qt casserole dish or 8-inch square pan. Cover with mashed potatoes. Top with remaining cheese. Bake for 18-20 minutes or until heated through and cheese is melted.
