Menu Plan Monday – February 7th

image
I have a recipe index, just for recipes that you can find on my blog. You can also get to it by going to the food tab above.

This week, I’ve started a new meal plan for me called The Lord’s Table as part of a bible study I’m doing with my discipleship team at church. It doesn’t really affect dinners, though, just the rest of the day.

Here's the plan for this week:
Mix-it up Monday (something new) ~  Asian Chicken Burgers (will post recipe tomorrow)
Taco Tuesday (Mexican or Oriental) ~ Tortilla Casserole
Wow Wednesday (Date night or something like restaurant food) ~ HuHot with the hubby
Simple Thursday (Crockpot or less than 30 min prep) ~ Taco Soup
Favorite Friday (A family favorite) ~ Pizza
Lazy Saturday (leftover buffet) ~ Leftovers
Saucy Sunday (Italian) ~ Stuffed Jumbo Shells

Come visit me for Tasty Tuesday for some more deliciousness.
So, what are you having for dinner this week?

Readings for the week: 1 Chronicles – Nehemiah

Here’s just a few random thoughts from my readings this week. There was so much good stuff, but with this pace, I just have to keep reading!

*Asaph’s song in 1 Chronicles 16 is chock-full of good stuff! Here’s my favorite part:

1 Chronicles 16:10-11 Glory in his holy name; let the hearts of those who seek the Lord rejoice! Seek the Lord and his strength; seek his presence continually!

*I also had lots of thoughts as I was reading Nehemiah. I can’t remember the last time I read the whole book of Nehemiah, and I really enjoyed it. I thought the format was very interesting, how it was a history of events told from the first person perspective interspersed with prayers to our God.

The part I liked the best was Nehemiah 8:9-12

And Nehemiah, who was the governor, and Ezra the priest and scribe, and the Levites who taught the people said to all the people, "This day is holy to the LORD your God; do not mourn or weep." For all the people wept as they heard the words of the Law. 10Then he said to them, "Go your way. Eat the fat and drink sweet wine and send portions to anyone who has nothing ready, for this day is holy to our Lord. And do not be grieved, for the joy of the LORD is your strength." 11So the Levites calmed all the people, saying, "Be quiet, for this day is holy; do not be grieved." 12And all the people went their way to eat and drink and to send portions and to make great rejoicing, because they had understood the words that were declared to them.

Oh, that the joy of the Lord will be my strength today!

Daily Photo – February 6th

During the Superbowl today, Kahlen and EJ decided that Kahlen was sick and needed to be doctored. He took *all* the toys and piled them on her…they had a blast! I love having a 4-year-old, they can just play by themselves for hours, hooray!

{embrace the camera} / Daily Photo – February 3rd

I just haven’t been taking that many pictures this week. Been too busy doing other things I guess.

Anyway, here’s a few pictures from swimming lessons (in the locker room) from today. We’re just about done with this session and the kids are loving it (especially now that I got them warmer suits)

Tasty Tuesday – Crème Brule Cheesecake Bars

Tasty Tuesday

Welcome to another week of Tasty Tuesday here at The Young'ns!
There’s a recipe index under the food tab above if you’re ever looking for a recipe I’ve already blogged.
Every Monday, I plan on trying a new recipe. If it goes well, that’s what I’ll be posting on Tasty Tuesday. If not, I’ll post a tried and true (i.e. something I don’t have to think about too hard) ;)

this is a Betty Crocker recipe that I found out in the blogosphere a while ago. I’ve made it twice now, both with raving reviews. When I made them last weekend for a party, they disappeared amid many requests for the recipe. I had one grandma ask if I had made them, then say “Shame on you” :) So, here’s the recipe

Crème Brule Cheesecake Barsimage

{Ingredients}

  • 1 pouch Betty Crocker sugar cookie mix I used Krusteaz the second time and it worked just fine
  • 1 box (4 oz) French vanilla instant pudding and pie filling mix
  • 2 T. packed brown sugar
  • 1/2 cup butter, melted
  • 2 1/2 t. vanilla
  • 2 eggs plus 3 egg yolks
  • 2 pkgs (8 oz each) cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup sugar
  • 2/3 cup toffee bits, finely crushed

{Directions}

  • Heat oven to 350 degrees.  Lightly spray bottom and sides of a 13×9 pan with cooking spray.  In large bowl, stir cookie mix, pudding mix, brown sugar, melted butter, 1 t. of the vanilla and 1 whole egg until soft dough forms.  Press dough in bottom and 1/2 inch up sides of pan.
  • In small bowl, beat cream cheese, sour cream and sugar with electric mixer on medium speed until smooth.  Add remaining whole egg, 3 egg yolks and remaining 1 1/2 t. vanilla; beat until smooth.  Spread over crust in pan.
  • Bake 30-35 minutes or until set in center.  Immediately sprinkle top with crushed toffee bits. Cool  30 minutes.  Refrigerate about 3 hours or until chilled.  Cut into 9 rows by 4 rows.  Store covered in the refrigerator. That is, if you have any leftovers and you don’t devour the entire pan!
